From a biological standpoint, sex is assigned at birth and defines whether you birth or not, if you have a dih, no matter how much estrogen you produce you will not be able to get impregnated. Intersex is an aberration, and the organs are rarely functional from what I’ve heard, that’s a mutation and should not be counted as a standard. In this case, the division from male and female makes sense, but only for actual intersex individuals with both reproductive organs.
From a cultural standpoint, every single culture, and I REALLY do mean every single, has a definition of a male and female and their traits. There are, of course, exceptions, but the cultural view is not going to change.
I kinda get what you’re trying to say, but documenting elements that are not going to be used is different, as these could be useful as catalysts for example. However, what use do we get from saying „oh he’s a man because despite having ovaries he produces a bit more testosterone”. What is the point? Scientific classification of theoretically possible elements is there to enclose the periodic table, to make it have sense, your de-classification of sex would overcomplicate the SIMPLE fucking concept of sex. I can see why you need your 2137 genders but don’t try to make the simple concept of sex not make sense…
