If we wanted to calculate the value of USD we would need to find the exact price of an item both in-game and in real life. Assuming their 1854 is ours but with magic (even if it’s not), you could create a fraction to compare the prices. I couldn’t find a price of any objects in 1854, but if you wanted to - -
say you wanted to compare the sailboat, which costs 300 galleons in game. You could substitute any in-game items that you are able to find both a price in 1854 and today.
300 galleons / x = the average price of a sailboat in 1854 / avg. sailboat price today
this would give us x = the price of a sailboat in galleons today. Following that, creating one more equation-
y / x = 1 USD / avg. sailboat price today
using x as the answer previously, solving for y would result in the answer of how much 1 dollar would equal in galleons today
the problem would be that the ratio of prices in arcane odyssey is likely not cohesive and is just randomly picked values that would give different equivalencies based on the chosen items used for the solution

Simplest and easiest thing to compare:
Bannanas. No seriously.
The average banana on a bundle costs 25 cents USD. In game the ‘worth’ of a banana is three galleons (if I remember correctly), and they sell for one
So this means 3 galleons is roughly 25 cents, and our conversion rate is 1 galleon = 8.33333… and we’ll round down to 8 cents. One galleon = 8 cents…
But that’s not satisfying right? That’s only comparing modern banana costs to galleon prices- and this isn’t even factoring in that fruit, in an ocean world, would be worth FAR more. The only actual farms we see are for Watermelons, Pumpkins and Wheat, two of which are private farms not tied to any kingdom but rather someones personal survival.
This means we can safely assume that people primarily subsist off of fish and fish-based meals outside of the country-islands like Ravenna. Fruit is a luxury. But Wait! What about places like Shell Island? Their island naturally produces bannanas, large ones too, with no need to stop at other islands-
Lots of factors to consider, so it’s impossible to do a 1:1 comparison without more fruits added to the game. Bananas in the 1800s were around $2 in value, since the importation was harder to achieve, and value changes everywhere. If the Nimbus Sea has no bannana producing islands, then they’ll pay more for the import, obviously.
But we’ll use Ravenna and say importing Bannanas from Limestone/Shell leads to similar cost as the US (I know its stupid lol)
That would put us at 3 galleons to 2 usd, so a 50% markup. A bit better then the last calc.
So TL;dr
If Galleons are equal to current day dollars, then they are 8 cents a pop. If they are equal to late 1800s USD, then about 66 cents a pop.
