When doing the plunge attack (2:23) try doing a Jump Attack then do a Plunge to increase damage. Also, wield your weapon with two hands. Think it could work.

And for the rest, get better and don’t waste stats. The journey towards completing Dark Souls is tough, but possible with enough will and determination.

Last time I tried that, it made me roll, I missed my plunge window, and got fucked 6 ways from Sunday.
