I honestly feel that white eyes and their terrifying alpha counterpart are already planned but you never know.

Hmmmm a white eyes pursuing you sounds like a pretty good idea to spice things up at the open. Rather than a continuous speed throughout battle, it could possibly dash quickly in one direction as an attack, traveling at around twice the speed of a maxed AA sailboat with a windup noise which could be some sort of roar. A breaching attack could act like Minotaurs slam dunk move announced by a sort of roar again I guess.
Considering harpoons are going to be added along with actual sea monsters, a battle like this could be very real.
The skies could change to indicate that it has spawned possibly along with an ominous drum tune when you are fighting it. Such as these.
As for the drops. Possibly an assortment of gear from the fishing loot table along with a 1 in 100 chance for sunken depending on how hard it is along with a unique drop as you said. A big shark boss battle idea? Take my vote.
