Oathkeeper is extremely effective against most fighting styles, however there are certain styles that drastically reduce its effectiveness or just straight up punish the Oathkeeper ability.
Sunken is overall good against all fighting styles, its a jack-of-all-trades when it comes to contesting with fighting styles.
I personally prefer Sunken, because there’s little reason for me to use Oathkeeper due to the fighting style that I’m using.
