since you only get a second fighting style after awakening i’m not so sure if we’ll be able to change them

yea

yeah, you can change them by going to their mentors which are located on different islands for a galleon fee and a specific strength requirement per fighting style

you can even relearn base combat again

You can change either or. Your second fighting style on awakening will probably be Basic Combat until you learn another.

One thing to consider is the fact that mastery will limit the abilities you can use though
