This was Theos at his prime. He was a very powerful wizard, and at the time Durza did have a lot of curses/magics, but not too many.
Sacrificing aurem to a god gives you more power then it does to the god you sacrifice it to. Cursebeard probably had a way to steal other peoples aurem and he probably got a lot of it all.
Durza gave them back the curse but not all their strength.
Curses make you far stronger than the average wizard, sure, but they don’t instantly make you unbeatable to everybody. As Omen said, Curse users can still be beaten, especially if the person you’re up against is one of, if not the most prodigal wizard to be born without any external enhancements (power-ups from a god, a Curse, bathing in magic radiation for centuries). Not to mention Theos was a straight up warrior even before getting Phoenix Magic while Durza was basically handed a cheat code as a child, so Theos is way more skilled in fighting.
And to support what Omen also said about Curse mastery, here’s a quote from Tech (I know it’s from a non-canon wiki but whatever):
04/23/2020 Q: But Durza has tons of curses, and Theos is still stronger than him. A: Having curses and magics does not equal mastery over them.
Also Durza can’t do shit if Theos is naturally just stronger then him. So I don’t even see why this a plothole.
Just because someone has a ton of curses doesn’t make them stronger than everyone else. Theos was probably just a more skilled person than Durza.

Like the majority said here, Theos was just far more skilled and powerful than Durza regardless of how many curses/magic he had at that time

Because of Unbound Curses, which is basically the beta version of curses given by Durza. Durza still has the Sand Curse, but given to Ramses in the Unbound Version, so when Ramses is defeated, The Sand Curse simply returns to Durza.
I would like for you to list out your plot holes for a challenge though
