I think the main thing discouraging me is that I subconsciously think could make like a Frostmill-sized island in a day and that I’ve failed in that already flawed goal after 15 minutes. Pinnacle of “Rome wasn’t built in a day.”

Jk, but yeah I know how you feel. I think it’s better to have a clear idea and find a way to lay it out before starting to build. Sometimes islands just come together super quick and other times they take days.
You just need to find your groove. 
My idea is to make a bunch of simple bricks to define the shape, then decorate around those.
