in gameplay sense? galleons sink
in lore? because you have to fix all of the damage you did to the gear ripping the gems out

It requires a very special tool to unsocket gems from equipment. By sheer coincidence, this tool has the exact same shape as 324 galleons.

you leave the galleons you paid for to unsocket them to the table for the nearest Alchemist/Enchanter to take all of that for themselves.

you damage your armor in the process of taking the gems out and you gotta pay some guy to repair it
